Mayonnaise, onion and pepper pretzel recipe
Medium flour: 400g, warm water: about 230ml, active dry yeast: 4g, Lexirui original mayonnaise: right amount, chives: 30g, salt: right amount, black pepper crush: right amount, olive oil: right amount
Step 1: Prepare the ingredients, pour the active dry yeast into the flour, wash the shallots and drain the water.
Step 2: Cut the shallot into sections, add a little olive oil and mix well, set aside
Step 3: Slowly pour warm water into the flour. Stir with chopsticks while stirring. Stir into a cotton wool shape until you can’t see the dry flour on the bottom of the basin.
Step 4: Knead the dough into smooth dough, roll it into a bowl
Step 5: Because the weather temperature is not enough, I used an oven to ferment. Adjust to the fermentation position. Cover the dough basin with a clean wet towel. Put a glass of water in the oven to maintain the humidity and ferment for 1 hour.
Step 6: Take out the fermented dough and grasp it with your hands to see the honeycomb-shaped holes.
Step 7: Take out the fermented dough to the kneading pad, flatten the exhaust gas with a rolling pin, cover with cling film and proof for 10 minutes
Step 8: Roll out the proofed dough into a thin crust and squeeze Lexirui Original Mayonnaise
Step 9: Use a spatula to evenly spread the mayonnaise, then sprinkle evenly with the right amount of salt and black pepper, and finally sprinkle with the shallot
Step 10: slowly roll up from one end
Step 11: roll the bar
Step 12: Cut into 10 pieces with a width of about 3cm (note that it must be in duplicate, because the two are combined to make a flower roll)
Step 13: Take two doughs and make them overlap, press down with chopsticks in the middle
Step 14: Take out the chopsticks, and use your hands to roll down the two ends of the flower rolls.
Step 15: Pour water into the steamer, put a thin layer of cooking oil on the steamer to prevent sticking, put the rolled flower rolls, cover it, open to high heat, steam for 15 minutes after steaming, turn off the heat 5 Minutes
Step 16: The fragrant flowers are ready ~
Step 17: Take a bite! Super delicious!
1. If you do n’t like green onion, you do n’t need to add green onion, and you can make mayonnaise pretzels.
2. When placing in the steamer, there must be a certain distance between the rolls, because the rolls will grow larger during the steaming process.
